The dishes
There are three tasting menus proposed by chef Enrico Marmo: Riviera and Liguria, from which it is also possible to order a la carte, and the freehand path of Momento.
Riviera is a five-courses experiential journey with the Liguria region as the background. It is focused on seafood dishes and on culinary characteristics that have always been part of the coastal gastronomic language.
Liguria is a five-course menu which perfectly describes the relationship between our cuisine and vegetables. This route is strongly linked to the regional hinterland, which offers a different starting point, to look at our land with a new perspective.
Momento is a freehand menu, in which the chef expresses all his creativity. It is a concentration of his philosophy, made of dexterity, dynamism and instinct, and as always it originates from the freshness of the raw material and your tastes.
The menu is completed by the iconics, dedicated to Giuseppina Beglia recipes, the chef who founded Balzi Rossi restaurant in 1982 and the person who made it an international gastronomic destination in the following years.





The wines
Curiosa, is made from unconventional labels, territorial and European. The wine list is the result of the selection work of the sommelier and restaurant manager Giuliano Revello, who loves to discover producers and wines far from the classic canons.
This incessant research, which occupies about 40% of the list, is a result of moving throughout the territory to select the best variations of Vermentino, Pigato, Rossese, and Moscatello. There is also a large representation of the best Italian and foreign products on the menu.
